The reasoning behind this is because a doe will generally only breed once a year, occassionally twice, as long as there is a buck around to impregnate them, and then they only have one or two fawns. One buck will impregnate several does. So, the thinking is that if the number of bucks is reduced, there will be less does impregnated. It really doesn't have anything to do with mounting the head on the wall. (And all of the hunters that I know consider the meat just as much of a reward as the trophy buck hanging on the wall.)
